Mrs. Stack's Apple Cake

1.5 cup oil
2 cups sugar
3 eggs
3 cups pared & diced granny smith apples
1 cup chopped nuts (optional)
3 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon vanilla

In large bowl: Combine and mix oil and sugar. Add eggs. Beat well. Stir in apples and nuts. Mix in dry ingredients. Add vanilla. Bake in a greased (with butter or oleo) and floured 11"x15" pan at 350 degree for 50-60 minutes. When cold sprinkle with confectionary sugar. Cut into 3" squares.
